Cake

Alyssa, Brittany and I could easily become frosting addicts. I’m sure it is my fault that the two of them love fluffy frosting so much. You see, each time I made a cake when they were little girls, I would always make extra frosting and store it in an airtight container. Whenever we had a piece of cake, we would put more frosting on top even though the cake already had double frosting .

Eventually we all just started eating the frosting out of the container. Whenever we had a hankering for frosting, we would just take a clean spoon out of the drawer and get a spoonful of frosting to eat s.l.o.w.l.y. kind of like you would a lollipop.

Like I said, we love frosting and we are all professional frosting consumers. After one lick, we can tell you if the frosting is yummy or not up to par.

There is an endless list of foods and things that taste delicious with frosting on it or that can be dipped into frosting. Foods such as:

Don’t let the word “frosting” intimidate you. I’m sure that you will make this frosting like a pro and it won’t be runny or taste gross.

Yes, I’m totally sure.

Put the butter and cream cheese in a mixing bowl with the whipping attachment. If you’re in a hurry you can put the butter, cream cheese, half the sugar and salt in the bowl at one time. Today I was in a hurry, so all the ingredients were plopped into the bowl at once.

When it starts to get a little fluffy, about a minute into whipping, turn the mixer speed down to the lowest setting and add half of the remaining sugar. Whip for another minute and if the frosting appears not that fluffy or thick, add the rest of the sugar. I usually use all the sugar. Now crank up the mixer speed and whip and whip and whip the frosting for about three to five more minutes. When you turn off the mixer, the frosting will be super fluffy.
